It was as yummy as we'd hoped
If you like the look and sound of it, here's the recipe..
600g/1lb 5oz pork fillet
1 tbsp olive oil
2 earting apples cored & cut into eighths
1 galic clove, crushed
2 tbsp maple syrup
1 tbsp white wine vinegar
2 tbsp wholegrain mustard
Cut the pork into slices 3cm/1" thick. Heat the oil in a large, non stick frying pan, add pork, then fry on both sides until lightly browned, about 5 minutes in total. Lift out of the pan and set aside.Add the apples to the pan and cook them for 3-4 minutes or until starting to soften.
Stir in the garlic, maple syrup, vinegar and 3 tablespoons of water, bring to the boil, then return the meat to the pan along with any juices. Simmer for a few more minutes, Stiring until the pork is cooked through and the sauce is thick and sticky. Stir in the wholegrain mustard and serve.

Early 40th birthday surprise
Yesterday was a very special day filled with nice surprises..
Its my 40th birthday on the 11th but as it falls on a work day the day would just pass me by without doing much at all to celebrate. So Debbie organised a day full of surprises. My mum & dad came accross from Bridlington to bring my birthday card,or should i say that's the reason i was told they were coming accross. Debbie then told me later that all the family were going out later for a meal at my favourite pub The old George :))
Mum & dad went out to see my nana and take her shopping, but when they got back they'd braught back a beautiful birthday cake from Creative Icing, it was where we had our wedding cake made too.
I know this part is gonna sound naughty but i opened my pressies too...well i was forced into it and i couldn't say no could i hehe
Anyway here are a few pictures of the day, hope you like
